Ingredients:

  • 2 chicken breasts, diced
  • 1 cup rice
  • 1/2 cup oats
  • 2 teaspoons paprika
  • 2 cups chicken broth
  • 1 cup water
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, and paprika. Cook until the chicken is browned on all sides.
  2. Add the rice and oats to the pot, stirring to combine with the chicken.
  3. Pour in the chicken broth and water, bringing the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice and oats are cooked and have absorbed the liquid.
  5. In a separate bowl, beat the eggs and then stir them into the pot during the last 5 minutes of cooking, allowing them to cook gently with the other ingredients.
  6. Remove from heat and let it sit for a few minutes before serving. Fluff with a fork and adjust seasoning if necessary.
