Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 1 lb red potatoes, halved
  • 1 large red onion, sliced
  • 2 tablespoons paprika
  • 1 tablespoon garlic salt
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine paprika, garlic salt, minced garlic, and melted butter. Mix well.
  3. Place the whole chicken in a roasting pan and rub the paprika mixture all over the chicken, making sure to get under the skin for maximum flavor. Season with salt and pepper.
  4. In another bowl, toss the halved red potatoes and sliced red onions with olive oil, salt, and pepper. Spread them around the chicken in the roasting pan.
  5. In a separate bowl, combine the bread crumbs with the remaining melted butter until well coated.
  6. After the chicken has roasted for about 30 minutes, remove it from the oven and sprinkle the buttered bread crumbs evenly over the top of the chicken.
  7. Return the chicken to the oven and continue to roast for another 30-40 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  8. Let the chicken rest for 10 minutes before carving. Serve with the roasted potatoes and onions, garnished with fresh herbs.
