Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup Parmesan dressing
  • 1 lb baby potatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the chicken breasts and Parmesan dressing. Let it marinate for at least 30 minutes.
  3. In a separate bowl, toss the halved baby potatoes with olive oil, minced garlic, dried Italian herbs, salt, and pepper until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer and roast in the oven for 20-25 minutes, or until golden and crispy, flipping halfway through.
  5. While the potatoes are roasting, heat a skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until fully cooked and golden brown.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Serve the chicken alongside the roasted potatoes, garnished with fresh parsley.
