Ingredients:

  • 1 medium zucchini, grated and excess moisture squeezed out
  • 1/2 cup chopped onion
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • Oil for frying

Instructions:

  1. In a large bowl, combine the grated zucchini, chopped onion, and grated Parmesan cheese.
  2. Add the flour, eggs, garlic powder, black pepper, and salt. Mix until well combined.
  3. Heat oil in a skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture into the skillet, flattening each scoop slightly to form fritters.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Remove from the skillet and place on paper towels to drain excess oil.
  7. Serve warm with a dipping sauce or on their own.
