Ingredients:

  • 8 oz pasta (penne or orecchiette)
  • 2 cups broccoli florets
  • 1 lb Italian sausage (mild or spicy, based on preference)
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Boil a large pot of salted water and cook pasta according to package instructions until al dente.
  2. In the last 3 minutes of cooking, add the broccoli florets to the pasta water.
  3. While the pasta and broccoli are cooking, heat olive oil in a large skillet over medium heat.
  4. Remove the sausage from its casings and add to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  5. Add minced garlic and red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.
  6. Drain the pasta and broccoli, then add them to the skillet with the sausage mixture. Toss to combine, adding salt and pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese and fresh parsley.
