Ingredients:

  • 300g pasta (spaghetti or penne)
  • 400g cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil leaves, for garnish
  • Parmesan cheese, grated (optional)

Instructions:

  1. 1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. 3. Add the halved cherry tomatoes to the skillet. Season with salt, pepper, and red pepper flakes if using. Cook for about 5-7 minutes until the tomatoes begin to soften and release their juices.
  4. 4. Add the drained pasta to the skillet, along with a splash of the reserved pasta water. Toss to combine, allowing the sauce to coat the pasta evenly. Adjust seasoning if necessary.
  5. 5. Remove from heat and garnish with fresh basil and grated Parmesan cheese if desired. Serve immediately.
