Ingredients:

  • 200g pasta (spaghetti or penne)
  • 300g cherry tomatoes, halved
  • 4 cloves garlic, thinly sliced
  • 1 cup vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing until fragrant and golden, about 1-2 minutes.
  3. Add the halved cherry tomatoes to the skillet and cook until they begin to soften, about 5-7 minutes. Pour in the vegetable stock and let simmer for another 3-4 minutes, allowing the flavors to meld.
  4. Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency. Season with salt and pepper to taste.
  5. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.
