Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1 cup green beans, trimmed
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Chopped peanuts for garnish

Instructions:

  1. Rinse the brown rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  2. While the rice is cooking, bring a small pot of water to a boil and blanch the green beans for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and red pepper flakes until smooth. Adjust seasoning with salt and pepper to taste.
  4. In a serving bowl, layer the fluffy brown rice, followed by the blanched green beans. Drizzle the peanut butter sauce generously over the top.
  5. Garnish with chopped green onions and peanuts before serving.
