Ingredients:

  • 1 cup peanut butter
  • 1 cup oats
  • 1/2 cup chickpea flour
  • 1/4 cup coconut flour
  • 1/4 cup flax meal
  • 1/2 cup protein powder
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup water (as needed)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, maple syrup, and vanilla extract until smooth.
  3. In another bowl, mix together the oats, chickpea flour, coconut flour, flax meal, protein powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring to combine. If the mixture is too dry, add water a tablespoon at a time until the desired consistency is reached.
  5. Pour the mixture into the prepared baking pan and press it down evenly.
  6. Bake for 20-25 minutes, or until the edges are golden brown.
  7. Allow to cool completely before cutting into bars.
