Ingredients:

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1 cup broccoli florets
  • 1 cup shredded cabbage
  • 1 cup mushrooms, sliced
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp sesame oil
  • 1/4 cup water
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced mushrooms, broccoli, and cabbage to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  4. In a separate bowl, whisk together peanut butter, soy sauce, honey, minced garlic, grated ginger, and water until smooth.
  5. Pour the peanut sauce over the chicken and vegetables in the skillet, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through.
  6. Add the cooked rice noodles to the skillet, tossing to coat them in the sauce. Adjust seasoning with salt and pepper as needed.
  7. Serve the noodle bowl garnished with sliced green onions and sesame seeds.
