Ingredients:

  • 8 spring roll wrappers
  • 1 cup thinly sliced pepperoni
  • 1 medium apple, cored and thinly sliced (preferably a sweet variety like Fuji or Honeycrisp)
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sweet chili sauce for dipping

Instructions:

  1. In a bowl, combine the sliced apples with honey, cinnamon, salt, and pepper. Mix well to coat the apples evenly.
  2. Lay a spring roll wrapper on a clean surface, with one corner pointing towards you. Place a few slices of pepperoni and a small handful of the apple mixture in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly to form a spring roll. Repeat with the remaining wrappers and filling.
  4. Heat olive oil in a large skillet over medium heat. Once hot, add the spring rolls in batches, frying until golden brown and crispy, about 2-3 minutes on each side.
  5. Remove from the skillet and drain on paper towels to remove excess oil. Serve warm with sweet chili sauce for dipping.
