Ingredients:

  • 2 cups jasmine rice
  • 1 can of Pepsi (12 oz)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed bell peppers, diced
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, combine the rinsed rice and Pepsi. Bring to a boil, then reduce heat to low and cover. Cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  3. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped onion, sautéing until fragrant and the onion is translucent.
  4. Add the diced bell peppers and peas to the skillet, cooking for an additional 3-5 minutes until the vegetables are tender.
  5. Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables. Stir to combine.
  6. Drizzle the soy sauce, fish sauce, and sesame oil over the rice mixture. Stir well to ensure everything is evenly coated.
  7. Remove from heat and stir in the sliced green onions, chopped cilantro, and lime juice. Season with salt and pepper to taste.
  8. Serve warm, garnished with additional cilantro and lime wedges if desired.
