Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup cooked rice (white or brown)
  • 1/2 cup pesto sauce
  • 1/2 cup shredded cheese (mozzarella or parmesan)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the heat and let it rest.
  4. In the same skillet, add the broccoli and red bell pepper. Sauté for about 3-4 minutes until the vegetables are tender but still vibrant.
  5. Slice the cooked chicken and return it to the skillet with the vegetables. Add the cooked rice and pesto sauce, stirring to combine everything evenly.
  6. Transfer the mixture to a baking dish, sprinkle the shredded cheese on top, and bake for 10-15 minutes until the cheese is melted and bubbly.
