Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup pesto sauce (store-bought or homemade)
  • 2 medium onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. 1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Remove from the skillet and set aside.
  2. 2. In the same skillet, add the remaining tablespoon of olive oil. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until the chicken is cooked through and golden brown.
  3. 3. During the last few minutes of cooking, add the minced garlic to the skillet and sauté until fragrant, about 1 minute. Then, spoon the pesto sauce over the chicken, allowing it to warm through.
  4. 4. Return the caramelized onions to the skillet, mixing gently to combine with the chicken and pesto.
