Ingredients:

  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 medium bell pepper, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 slices provolone cheese
  • 2 hoagie rolls
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, season with salt and pepper, and cook until caramelized, about 10-15 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Add the thinly sliced ribeye steak, seasoning with salt and pepper. Cook quickly, stirring frequently, until browned, about 3-4 minutes.
  3. Return the caramelized onions and peppers to the skillet with the steak, mixing well to combine all the flavors.
  4. Place the provolone cheese slices over the steak mixture, allowing them to melt for about 1-2 minutes.
  5. To assemble, cut the hoagie rolls open and fill with the steak and cheese mixture. Garnish with fresh parsley before serving.
