Ingredients:

  • 2 halibut fillets (about 6 oz each)
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup whole wheat breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 lemon (zested and juiced)
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup Greek yogurt

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the chopped pistachios, whole wheat breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Drizzle olive oil over the mixture and stir until combined.
  4. Place the halibut fillets on a baking sheet lined with parchment paper.
  5. Spread the pistachio mixture evenly over the top of each fillet, pressing gently to adhere.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
  7. While the halibut is baking, prepare the lemon-dill sauce by mixing Greek yogurt, lemon zest, lemon juice, and chopped dill in a small bowl.
  8. Serve the halibut with a dollop of lemon-dill sauce on the side.
