Ingredients:

  • 1 cup polenta
  • 4 cups water or vegetable broth
  • 1 cup deli ham, diced
  • 2 medium zucchinis, sliced into half-moons
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a pot, bring water or vegetable broth to a boil. Gradually whisk in the polenta. Reduce heat to low and cook for about 30 minutes, stirring frequently until thick and creamy. Season with salt and pepper to taste.
  2. While the polenta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes.
  3. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced zucchini and sauté until tender, about 5-7 minutes. Season with salt and pepper.
  4. Once the polenta is cooked, serve it in bowls or plates, topped with the sautéed zucchini, diced deli ham, and caramelized onions.
  5. Garnish with fresh chopped parsley before serving.
