Ingredients:

  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 celery stalk, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chicken pieces and sausage, cooking until browned, about 5-7 minutes.
  2. Add the diced onion, bell pepper, celery, and garlic to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  5. Remove the bay leaf and fluff the jambalaya with a fork. Adjust seasoning if necessary.
  6. Serve hot, garnished with chopped green onions.
