Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 bottle (12 oz) porter beer
  • 2 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper, then brown them in batches until browned on all sides. Remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until softened.
  3. Stir in the tomato paste, cooking for another minute before adding the porter beer, scraping the bottom of the pot to deglaze.
  4. Return the beef to the pot, then add beef broth, carrots, potatoes, thyme, rosemary, and bay leaf. Bring to a simmer.
  5. Cover the pot and reduce heat to low. Let it cook for 2 to 3 hours, or until the beef is tender.
  6. Remove the bay leaf before serving. Garnish with fresh parsley and enjoy!
