Potato, Cabbage, and Tomato Bake

Ingredients:

  • 4 medium potatoes, thinly sliced
  • 1 small head of green cabbage, chopped
  • 2 cups ripe tomatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup grated cheese (optional)
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped cabbage to the skillet. Cook until the cabbage is wilted, about 8-10 minutes.
  4. Stir in the diced tomatoes, thyme, smoked paprika, salt, and pepper. Cook for an additional 5 minutes until the mixture is heated through.
  5. In a greased baking dish, layer half of the sliced potatoes at the bottom. Spread half of the cabbage and tomato mixture over the potatoes.
  6. Add another layer of potatoes, followed by the remaining cabbage and tomato mixture. Top with the last layer of potatoes.
  7. If using, sprinkle grated cheese over the top layer of potatoes.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  9. Let it cool slightly before serving. Garnish with fresh parsley.
