Ingredients:

  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon cumin
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 1/2 cup diced tomatoes (canned or fresh)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
  2. Slowly whisk in the milk, stirring constantly until the mixture thickens, about 3-5 minutes.
  3. Reduce heat to low and add the cream cheese, stirring until melted and smooth.
  4. Gradually add the Monterey Jack and cheddar cheeses, stirring until fully melted and combined.
  5. Stir in garlic powder, onion powder, cayenne pepper, cumin, and chopped jalapeño.
  6. Add the diced tomatoes and season with salt to taste. Stir until everything is well combined and heated through.
