Ingredients:

  • 1 lb carrots, peeled and cut into sticks
  • 1 lb potatoes, diced into cubes
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the carrots and potatoes. Drizzle with olive oil and season with garlic powder, salt, and pepper. Toss to coat well.
  3. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
