Ingredients:

  • 500g bread flour
  • 350ml water, lukewarm
  • 10g sea salt
  • 5g active dry yeast
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon honey (optional)

Instructions:

  1. In a large mixing bowl, combine the bread flour and salt, leaving a small well in the center.
  2. In a separate bowl, dissolve the active dry yeast and honey in the lukewarm water. Let it sit for about 5 minutes until frothy.
  3. Pour the yeast mixture into the well of the flour mixture, along with the olive oil.
  4. Mix the ingredients with a wooden spoon until a dough begins to form.
  5. Add the chopped herbs and knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  7. Once risen, punch down the dough and shape it into a round loaf.
  8. Place the shaped loaf on a baking sheet lined with parchment paper. Let it rise again for about 30-45 minutes.
  9. Preheat the oven to 220°C (428°F). Make a few slashes on the top of the loaf with a sharp knife to allow for expansion.
  10. Bake the bread for 25-30 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
  11. Remove from the oven and let it cool on a wire rack before slicing.
