Ingredients:

  • 4 medium potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
