Ingredients:

  • 4 medium potatoes, diced
  • 2 sausages, sliced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cups kale, chopped
  • 3 cloves garlic, minced
  • 1 cup green beans, trimmed
  • 1 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until translucent.
  3. Add the diced potatoes and carrots, cooking for about 5 minutes, stirring occasionally.
  4. Stir in the minced garlic, green beans, thyme, paprika, salt, and pepper. Cook for another 2 minutes.
  5. Return the sausage to the pot and pour in the milk, stirring to combine. Bring to a simmer.
  6. Add the chopped kale, cover the pot, and let simmer for 15-20 minutes or until the vegetables are tender.
  7. Adjust seasoning if necessary, and serve warm.
