Ingredients:

  • 1 lb fresh salmon, skin removed
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped

Instructions:

  1. In a large bowl, finely chop the salmon and combine it with breadcrumbs, red onion, parsley, Dijon mustard, beaten egg, salt, and pepper. Mix until just combined.
  2. Form the mixture into 4 equal patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through.
  4. While the patties are cooking, prepare the sauce by mixing Greek yogurt, mayonnaise, lemon juice, lemon zest, and dill in a small bowl. Season with salt and pepper to taste.
