Ingredients:

  • 8 oz penne pasta
  • 1 lb Italian sausage, casings removed
  • 1 medium head cauliflower, cut into florets
  • 2 cups cherry tomatoes, halved
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Add the minced garlic and dried oregano to the skillet, cooking for an additional minute until fragrant.
  5. Stir in the cauliflower florets and cherry tomatoes, cooking for 5-6 minutes until the cauliflower is slightly tender.
  6. Add the marinara sauce to the skillet, mixing well to combine. Season with salt and pepper to taste.
  7. In a large mixing bowl, combine the cooked pasta with the sausage and vegetable mixture.
  8. Transfer the mixture to a greased baking dish. Top with shredded mozzarella and grated Parmesan cheese.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Remove from the oven and let cool for a few minutes before serving. Garnish with fresh basil if desired.
