Ingredients:

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 packet gravy mix (prepared as per package instructions)
  • 1 can refrigerated biscuits
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the breakfast sausage and cook until browned and cooked through, breaking it into small pieces.
  3. In a large mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, garlic powder, onion powder, black pepper, and salt until well combined.
  4. Add the cooked sausage to the egg mixture and stir to combine.
  5. Prepare the gravy mix according to the package instructions and fold it into the egg and sausage mixture.
  6. Pour the mixture into a greased 9x13 inch baking dish.
  7. Open the can of biscuits and cut each biscuit into quarters. Arrange the biscuit pieces on top of the casserole mixture.
  8. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the biscuit topping is golden brown.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
