Ingredients:

  • 1 lb Italian sausage, sliced
  • 1 small head of cabbage, chopped
  • 2 cups kale, stems removed and chopped
  • 1 large onion, sliced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  2. Add the sliced onion and diced carrots to the skillet. Sauté for another 5 minutes until the onion becomes translucent.
  3. Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
  4. Add the chopped cabbage and kale to the skillet. Pour in the chicken broth and stir to combine. Season with salt and pepper.
  5. Cover the skillet and let it simmer for about 10-15 minutes, or until the vegetables are tender.
  6. Remove the lid and stir in the apple cider vinegar. Cook for an additional 2-3 minutes to let the flavors meld.
  7. Garnish with fresh parsley before serving.
