Ingredients:

  • 8 oz shell noodles
  • 1 lb ground sausage
  • 1 cup mozzarella cheese, shredded
  • 1 cup tomato paste
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the shell noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, brown the ground sausage over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Stir in the tomato paste, chicken broth, dried oregano, and dried basil. Season with salt and pepper. Let it simmer for about 5 minutes to combine the flavors.
  5. In a large mixing bowl, combine the cooked shell noodles with the sausage mixture and half of the mozzarella cheese. Mix well.
  6. Transfer the mixture to a greased baking dish. Top with the remaining mozzarella cheese and, if using, the grated Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Remove from oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
