Ingredients:

  • 1 pound Italian sausage (sweet or spicy, your choice)
  • 8 ounces mushrooms (cremini or button), sliced
  • 2 large carrots, sliced
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned and cooked through, about 8-10 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for 5-7 minutes until golden brown.
  3. Add the minced garlic and thyme to the mushrooms, cooking for an additional minute until fragrant.
  4. In a separate pan, combine the sliced carrots, honey, a pinch of salt, and a splash of water. Cook over medium heat, stirring occasionally, until the carrots are tender and glazed, about 8-10 minutes.
  5. Return the cooked sausage to the skillet with mushrooms, mixing well. Season with salt and pepper to taste.
  6. Serve the sausage and mushroom mixture on a plate, topped with the honey-glazed carrots. Garnish with fresh parsley.
