Ingredients:

  • 1 pound pork sausage, casings removed
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden and tender.
  2. Add the chopped onion and bell pepper to the skillet, and cook for another 5 minutes until they are softened.
  3. Push the vegetables to one side of the skillet and add the pork sausage to the empty side. Cook, breaking it up with a spatula, until browned and fully cooked, about 5-7 minutes.
  4. Stir in the minced garlic, smoked paprika, dried thyme, salt, and pepper. Combine everything in the skillet and cook for an additional 2 minutes to allow the flavors to meld.
  5. Remove from heat and garnish with fresh parsley before serving.
