Ingredients:

  • 1 cup rice (jasmine or basmati)
  • 2 cups water or chicken broth
  • 1 pound ground sausage (Italian or breakfast sausage)
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese (for serving, optional)

Instructions:

  1. In a medium pot, combine rice and water (or broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until rice is cooked and water is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the ground sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the chopped spinach and red pepper flakes (if using). Cook until the spinach is wilted, about 2-3 minutes. Season with salt and pepper to taste.
  5. Once the rice is cooked, fluff it with a fork and divide it among serving bowls. Top each bowl with the sausage and spinach mixture.
  6. If desired, sprinkle grated Parmesan cheese on top before serving.
