Ingredients:

  • 1 lb Italian sausage (sweet or spicy)
  • 2 medium bell peppers (red and yellow), sliced
  • 1 large onion, sliced
  • 3 medium potatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to become tender.
  2. While the potatoes are cooking, in a separate pan, cook the Italian sausage over medium heat until browned and cooked through. Remove from the pan and slice into bite-sized pieces.
  3. In the same skillet with the potatoes, add sliced onions and bell peppers. Cook for 5-7 minutes until they are softened.
  4. Add minced garlic, dried oregano, paprika, salt, and pepper. Stir well to combine and cook for an additional 2 minutes.
  5. Return the cooked sausage to the skillet and mix everything together. Cook for another 5 minutes until heated through.
  6. Garnish with fresh parsley before serving.
