Ingredients:

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, diced
  • 4 cups chicken broth
  • 1 cup kale, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the garlic and cook for an additional minute until fragrant.
  3. Add the Italian sausage to the pot, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  4. Stir in the diced potatoes, chicken broth, smoked paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. Add the chopped kale and heavy cream to the soup. Stir well and cook for another 5 minutes until the kale is wilted and the soup is heated through.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
