Ingredients:

  • 4 cups fresh spinach, washed and dried
  • 1 cup radishes, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions:

  2. Remove the skillet from heat and allow the spinach to cool slightly.
