Ingredients:

  • 4 slices of bacon, chopped
  • 2 large eggs
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups water or milk
  • 1 tablespoon butter (for cooking)

Instructions:

  1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
  2. In a mixing bowl, combine the cornmeal, baking powder, salt, and pepper. Gradually stir in the water or milk until a smooth batter forms.
  3. Pour the cornmeal mixture into the skillet with the bacon fat and spread it evenly. Cook for about 5-7 minutes until the bottom is golden brown.
  4. Using a spatula, flip the cornmeal base and cook for another 5 minutes on the other side until golden.
  5. Make two wells in the cornmeal base and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 3-5 minutes.
  6. Once the eggs are cooked, sprinkle the cooked bacon over the top. Serve warm, garnished with additional pepper if desired.
