Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 tablespoons olive oil
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, oregano, thyme, paprika, salt, and pepper. Mix well and let simmer for 3-4 minutes.
  6. Remove from heat and stir in half of the shredded cheese.
  7. Stuff each bell pepper with the beef mixture, packing it down gently. Top each stuffed pepper with the remaining cheese.
  8. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.
  9. Garnish with fresh parsley before serving.
