Ingredients:

  • 1 lb ground beef
  • 4 large eggs
  • 1 cup fresh kale, chopped
  • 1/2 cup baby bella mushrooms, sliced
  • 1 medium tomato, diced
  • 1 tsp turmeric
  • 1/4 cup coconut flour
  • 1 apple, grated
  • 1 avocado, diced
  • 1 tsp fresh basil, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh sage, chopped
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 carrot, grated

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spatula. Season with salt, pepper, turmeric, cinnamon, and allspice.
  3. Add the chopped kale, sliced mushrooms, and diced tomatoes to the skillet. Cook for about 5 minutes until the kale is wilted.
  4. In a bowl, whisk together the eggs, coconut flour, grated apple, and fresh herbs (basil, thyme, sage). Stir in the grated carrot.
  5. Combine the beef and vegetable mixture with the egg mixture. Stir in the cheddar and mozzarella cheeses, ensuring everything is well mixed.
  6. Pour the mixture into a greased baking dish and smooth the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden.
  8. Let cool for a few minutes before serving. Top with diced avocado before serving for an extra creamy texture.
