Savory Beef and Mushroom Shepherd's Pie

Ingredients:

  • 1 lb beef mince
  • 1 cup mushrooms, finely chopped
  • 2 carrots, diced
  • 4 medium potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup milk

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and garlic, cooking until softened.
  3. Add the beef mince to the skillet, breaking it apart with a spoon. Cook until browned.
  4. Stir in the chopped mushrooms and diced carrots, cooking for an additional 5 minutes.
  5. Add Worcestershire sauce, beef broth, thyme, rosemary, salt, and pepper. Let simmer for 10 minutes until the mixture thickens slightly.
  6. Meanwhile, boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  7. Add butter and milk to the potatoes, mashing until smooth. Season with salt and pepper to taste.
  8. Transfer the beef mixture into a baking dish and spread the mashed potatoes on top evenly.
  9. Bake in the preheated oven for 25-30 minutes, until the top is golden brown.
  10. Let cool slightly before serving.
