Ingredients:

  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the garlic and sliced mushrooms to the skillet, cooking until the mushrooms are browned and tender.
  3. Push the vegetables to the side of the skillet and add the ground beef, breaking it up with a spoon. Cook until browned and cooked through.
  4. Sprinkle the flour over the beef mixture and stir to combine, cooking for an additional minute.
  5. Slowly pour in the beef broth, stirring constantly to avoid lumps. Bring to a simmer.
  6. Stir in the sour cream, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Allow to simmer for about 5 minutes until the sauce thickens.
  7. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
  8. Serve the beef stroganoff over the egg noodles, garnished with fresh parsley.
