Ingredients:

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the sliced mushrooms and cook until they are tender and have released their moisture, about 5 minutes.
  5. Add Worcestershire sauce, Dijon mustard, and beef broth. Bring to a simmer and let it cook for about 5 minutes to thicken slightly.
  6. Reduce the heat to low and stir in the sour cream. Mix until well combined and heated through. Season with salt and pepper to taste.
  7. Serve the stroganoff over the cooked egg noodles and garnish with chopped parsley.
