Ingredients:

  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1/4 cup white wine
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped
  • 8 oz egg noodles
  • Optional: 1 tbsp Worcestershire sauce

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  3. Add the ground beef to the skillet, breaking it apart and cooking until browned. Season with salt and pepper.
  4. Stir in the sliced mushrooms and cook until they are tender, about 5 minutes.
  5. Pour in the white wine and let it simmer for a couple of minutes until reduced slightly.
  6. Add the beef broth and Dijon mustard, mixing well. Allow the mixture to simmer for about 10 minutes.
  7. Reduce heat to low and stir in the sour cream until fully incorporated. Adjust seasoning with salt, pepper, and Worcestershire sauce if using.
  8. Fold in the cooked egg noodles and gently mix until they are coated in the sauce.
  9. Serve hot, garnished with fresh parsley.
