Ingredients:

  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 8 oz egg noodles
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes.
  3. Add the minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until the mushrooms are tender.
  4. Push the vegetables to the side of the skillet and add the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  5. Sprinkle the flour over the beef mixture and stir to combine. Cook for 1 minute to eliminate the raw flour taste.
  6. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring to combine. Bring to a simmer and cook for about 5 minutes until slightly thickened.
  7. Reduce heat to low and stir in the sour cream and nutmeg. Season with salt and pepper to taste.
  8. Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
