Ingredients:

  • 1 lb ground beef
  • 1 large onion, diced
  • 2 medium potatoes, diced
  • 2 Roma tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onions and cook until they are translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.

  7. Once the potatoes are cooked, stir in the chopped Roma tomatoes and diced peppers. Cook for an additional 5 minutes until the peppers are slightly softened.
