Ingredients:

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 cup rice (white or brown)
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cups beef broth
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  4. Stir in diced potatoes, rice, garlic powder, paprika, salt, and pepper. Mix well.
  5. Pour in the beef broth, bring to a simmer, then cover and cook for about 15 minutes or until the rice and potatoes are tender.
  6. Transfer the mixture to a greased casserole dish. Spread evenly.
  7. In a small bowl, mix the yogurt with a pinch of salt and a sprinkle of paprika. Spread the yogurt mixture over the top of the casserole.
  8. Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
  9. Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley before serving.
