Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 can (14.5 oz) diced tomatoes, drained

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  5. Stir in the chopped spinach, cooked rice (if using), diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 3-4 minutes until the spinach is wilted.
  6. Stuff each bell pepper with the beef mixture, pressing down gently to pack it in.
  7. Place the stuffed peppers in a baking dish and sprinkle the tops with shredded mozzarella cheese.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let cool slightly before serving. Enjoy!
