Ingredients:

  • 1 lb (450g) beef, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 bulb of fennel, sliced
  • 1 small butternut squash, peeled and diced
  • 1 red capsicum, diced
  • 1 cup cauliflower florets
  • 1 sweet potato, peeled and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove and set aside.
  3. In the same pot, add the chopped onion and garlic, sautéing until softened.
  4. Stir in the carrots, fennel, sweet potato, and butternut squash. Cook for about 5 minutes until they start to soften.
  5. Add the diced capsicum and cauliflower florets, cooking for another 3 minutes.
  6. Return the beef to the pot and sprinkle with thyme, paprika, salt, and pepper. Pour in the beef broth and stir to combine.
  7. Cover the pot and transfer it to the preheated oven. Bake for 1 hour, or until the beef is tender and the vegetables are cooked through.
  8. Garnish with fresh parsley before serving.
