Ingredients:

  • 1 lb ground beef
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Rinse quinoa under cold water and drain.
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed. Remove from heat and fluff with a fork.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Season with salt, pepper, oregano, and smoked paprika.
  5. Stir in the diced red bell pepper, zucchini, carrot, and broccoli. Cook until the vegetables are tender, about 5-7 minutes.
  6. Serve the beef and vegetable mixture over a bed of quinoa. Garnish with fresh parsley before serving.
