Ingredients:

  • 1 lb ground beef
  • 2 medium potatoes, thinly sliced
  • 1 cup cooked rice
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 cup shredded cheese (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Add minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it up with a spatula. Season with thyme, paprika, salt, and pepper.
  4. In a greased baking dish, layer half of the sliced potatoes at the bottom.
  5. Spread the cooked rice evenly over the potatoes, then layer the beef and vegetable mixture on top.
  6. Add the remaining potato slices on top of the beef mixture. Pour the beef broth evenly over the entire dish.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and slightly golden.
  8. If using, sprinkle shredded cheese on top and return to the oven for 5 more minutes until melted.
  9. Serve hot with a dollop of yogurt on each plate.
